About The FOG Program


FOG stands for Fats, Oils, and Grease. This means any material, either liquid or solid, composed of fats, oils, or grease from an animal or vegetable source. When discharged into the sanitary sewer system, FOG builds up on pipe walls and blocks flow, causing wastewater toback up and flow out of manholes, or even back into homes and buisnesses. This is Sanitary Sewer Overflow (SSO). It requires costly clean up and may be hazardous to human health and the environment.

The FOG Program was created to address the issue on a regional level and educate Food Service Establishment (FSE) owners and employees on preventable FOG related SSO's.

FOG Program Overview

  • Don't pour fats, oils, and grease down the drain.
  • Make sure that all GCD's are properly installed.
  • Submit a registration form provided by the Department of Public Works.
  • Register and attend the FSE Employee Training Course.
  • After completing the training course, teach fellow employees the importance of GCD Maintenance.
  • Begin a log, provided by the Department of Public Works, for all GCD Maintenance and Cleaning. Keep the log on site and make sure all employees know the location of the log.
  • Begin a log, also provided by the Department of Public Works, for the disposal of all yellow grease. Keep the log on site and be sure all employees know where it is.

The Town of Smithfield adopted its Fats, Oils & Grease (FOG) Ordinance on Tuesday, August 4th, 2009.
